While Chocolate Zucchini Bread may sound scary, I just thought it was a good idea. This was a lower-fat recipe from Eating Well, but I would have made it even if it had been full-fat.

This was a pretty simple recipe to make overall. You toast walnuts before adding them to the batter to give them more flavor. The recipe calls for a mixture of whole wheat flour and AP flour, and applesauce in place of some of the oil. It also calls for an ounce of melted chocolate, but I actually didn’t have unsweetened chocolate so I used 3 tablespoons of cocoa and 1 tablespoon of oil in its place.

Chocolate Zucchini Bread

This turned out pretty well. I took this to work and there was none left to come home! It was very moist and very tasty, and had a good chocolate flavor. Even though it’s healthier than a lot of zucchini bread recipes, it didn’t really seem that way. I recommend this recipe.
