My husband asked all my friends to give me recipes for my birthday last year. I stashed them in a recipe book, planning to make them at some point in the future when they seem appropriate. Well, there’s no more appropriate time than when I’m making a point to try new recipes!
Sunday morning I made Banana Oatmeal Pancakes, one of the recipes my friend Allison gave me. I didn’t have sour cream, or yogurt which would have been a good substitute, so I soured some milk with a little lemon juice instead. This made a thinner pancake batter than I think it was supposed to be, but they turned out just fine.
I never feel like my pancakes turn out very pretty. They're never picture-esque. I usually over-brown them, and this wasn’t much different. I think I just need more practice with pancakes.
These were good, much better than a banana pancake recipe I’d made in the past. I liked the addition of rolled oats and walnuts. They were sweet enough that I didn’t need any syrup or anything else extra, although Alex still used syrup. I don't like raisins, so I added them in the last group I made so that Alex could eat them.
