7: Almond-Honey Power Bars

I’ve always wanted to try to make power bars or granola, but they’re always so high-calorie, and full of sugar or fat, that I decide not to bother. We were going out of town for the weekend, though, and I wanted to be sure that I had something to eat in case I was stuck in a place where I didn’t like anything (like if there was an omelet restaurant, for instance).  I also wanted to be sure there was something in case we had to wait a while between meals.

I already had everything to make Almond-Honey Power Bars if I made a few minor substitutions. The only dried fruit I had was raisins, so I used a full cup to substitute for the other fruits. I used brown sugar instead of turbinado sugar, used extra almonds for the other seeds, and used plain cheerios as the cereal. I may have cooked the almond butter-honey mixture a little too long or I may have refrigerated it too long, because it was much easier to break them into pieces instead of cutting them.

These were a really satisfying snack. They’d be perfect with a glass of milk. I’m not a fan of raisins, but I didn’t mind them in this. With the almonds and almond butter, it was pretty almond-y, but I think it’d be good with natural peanut butter or some other nuts, too. Maybe I’ll play around. Alex already wants me to make another pan.

Edit: Use almond extract in these; it really adds something special!
