Considering I really just want to bake cookies, I've baked remarkably few so far this December. A few nights ago I finally gave in and baked Cocoa Fudge Cookies. These looked great, and I was excited to try them.
The recipe is very simple, and you can make it all in the saucepan you melt butter in. Melt butter and add sugar, brown sugar, cocoa (lots of cocoa). Add yogurt and a little vanilla. Add flour with a little baking soda and salt.
The dough started to stiffen up immediately, so you want to drop your cookies immediately. Spread them into rounds if appearance is important to you. I spooned the dough onto baking sheets (covered by Silpat, of course), leaving it in dollops. I got 23 cookies, barely. I think silicone baking sheets bake a little more slowly, so I baked the cookies 9 minutes.
The cookies were pretty good. The outside was crackly and a bit crisp, while the insides were chewy. They were definitely dark chocolate, and rich, but not particularly sweet. I'm not entirely sure what I think about them. I like them, but I'm not sure I'd make them again. They have a different texture from a traditional cookie - perhaps it's because they have no eggs. I found myself wishing they had some nuts in them, oddly enough. Alex said he's liked other cookies more, mostly because he likes sweeter cookies.
They were incredibly fast and easy to make, and they were tasty cookies. I'm not going to give up on trying other chocolate cookie recipes. These are definitely worth trying, but I'm not sure when I'll make them again.
