A Fourth 2018 #cook90 Update

I've made my final #cook90 meal plan, and I've updated my meal list for January. Technically I only have to cook through Wednesday, but I'm in the groove so I went ahead and made it for the full week.

Last week's meal plan was fine. I think it's the first time I haven't made changes to the meal plan mid-week.

The winning meals last week were the pork with potatoes and pears (I've made that one before, and it's easy), and the pasta with white beans and escarole (which was very fast). I used my new Instant Pot (affiliate link) to pressure cook the beans, and they turned out rather well. I also made my usual black bean soup recipe but used my slow cooker for it, which worked perfectly.

For the pasta, I sauteed garlic, red pepper flakes, and escarole in bacon grease I've stored in the fridge, then tossed in pasta and water and brought it to a boil. (I measured the water, but I already forget how much I put in. Maybe 6 cups? 8 cups?) Added in the still-warm white beans from the Instant Pot (affiliate link), and used some of their liquid for cooking the pasta. Added a liberal amount of salt, maybe a teaspoon? It would have been a little better with broth in place of some of the water, but it was nice to make something quick without a recipe.

Fun recipe continued to be more Gooey Butter Cake as I tested a few more batches. So good. Fun breakfast was... chocolate multigrain pancakes. It was too busy a weekend to do much beyond that.

I already think I'm changing my meal plan for this week. It's Monday and I'm feeling a little under the weather, so I switched us to leftovers and pushed everything back by a day.
