For dinner I made Braised Chicken Thighs with Plums. This was a pretty simple and fast recipe. I halved the recipe for just the two of us. I used white plums instead of purple (or red?) plums. I cooked the chicken in olive oil instead of butter. I also accidentally added the equivalent of two garlic cloves instead of one (I use jarred minced garlic). I forgot to add the lemon juice until after I had plated dinner, so I just drizzled it over mine. The recipe suggested serving it with couscous with lemon zest, so I did.
This was okay. I didn’t think it was anything special. Perhaps my plums didn’t cook down as much as they were supposed to, but I didn’t think the plums added anything to the chicken. Otherwise, the sauce was just okay – the lemon juice brightened it up a little bit. There was nothing wrong with this recipe – Alex liked it – but I was hoping to be wowed, which I wasn’t. I won’t make it again.
