Combine all ingredients except white chocolate chips in the bowl of a stand mixer. Use the dough hook to stir and knead the dough on medium speed for about 7 minutes. The dough should feel soft but not sticky; add a little flour if necessary. Place in a greased bowl and let rise, doubled, in a warm place for about an hour, until doubled in size.
Knead in white chocolate chips and shape for your greased 9x5 inch loaf pan. Spray the top with cooking spray and let rise, covered, for about another hour, until dough is doubled in bulk. Preheat oven to 350F. Bake for about 40 minutes, until the internal temperature reaches 190F. Check after 20 minutes and cover it with foil to prevent excessive browning. (I wish I had done this!) Cool completely before slicing.
