Delicious chocolate peanut butter bites loaded with fiber from oats and flaxseed meal. Peanut butter provides protein, and chocolate provides decadence. A perfect nutritious and satisfying snack!
1cup + 2 tablespoonsoats(90 grams) (I prefer quick oats here)
6tablespoonsflaxseed meal(42 grams) (substitute entirely with oats if desired)
Instructions
Stir together peanut butter, honey, and chocolate chips in a heatsafe bowl, and microwave on high for about 30 seconds. Stir until mixture is smooth.
If the chocolate chips don't entirely melt, microwave for another 10 seconds, then stir again.
Add oats and flax meal, and stir until combined.
Mixture may be crumbly and hard to mix, but it will come together. You can use the side of the rubber spatula to press the oats into chocolate, or you can use your hands. If you'd rather, stir in a little extra honey.
Scoop into balls; I prefer to use my smallest cookie scoop for bite-size balls. If mixture is crumbly, use your hands to finish rolling the balls. If mixture is sticky, roll peanut butter bites in extra oats.
Notes
Use creamy peanut butter. You will need to use additional if you use crunchy peanut butter. Natural peanut butter (with no sugar added) will not work the same. If you're a vegan who doesn't eat honey, I bet golden syrup, agave, or molasses would substitute nicely.Use extra honey if you'd like a sweeter bite; you can use up to ⅓ cups total. The bites will be sticky, so plan to roll them in extra oats.I prefer semisweet chocolate chips. Milk chocolate chips will make a sweeter bite, but they do not melt as easily. Be prepared to stir more and perhaps add a little extra honey if you use milk chocolate chips.I prefer rolled oats, which are smaller than old-fashioned and mix in better.Use ground flaxseed or flaxseed meal, and not whole flax seeds, which are not easily digestible and will not work well in this recipe. The bites will firm up as the chocolate cools and sets. But if it still seems too sticky or if you're worried, roll the bites in additional oats.
