Fake Steak (or Mock Filet Mignon) is a ground beef and rice patty wrapped in bacon - a hearty, satisfying main dish with no gravy and no condensed soup.
2cupscooked white rice(290 grams/10 oz; cooled but not cold)
1cuponion(~113 grams/4 ounces; about 1 medium or ½ large) (finely minced)
½teaspoongarlic(minced; 1 clove)
2tablespoonsWorcestershire sauce(30 grams)
1 ¼teaspoonstable salt
¼teaspoonground pepper
8slicesbacon(optional but recommended)
Instructions
Sprinkle Worcestershire sauce and seasonings over the beef and rice so they don't clump. Use your hands to gently combine all ingredients. Don't overwork the meat or it can become tough, but be sure all the rice is mixed throughout and not clumpy.
Shape into eight ¾-inch patties.
If using, wrap bacon around each patty; you can use a wooden (not plastic) toothpick to fasten it if necessary. If not using bacon, indent patties slightly in center to reduce puffing.
Place on broiler rack over a drip tray (preferred) or in a shallow baking pan. If desired, place vegetables on drip tray to roast (see notes). Bake at 450F for 20-25 minutes.
Make-Ahead Instructions
Place shaped patties separated on a sheet of waxed paper or plastic wrap on a plate; I get 4 per plate. Top with another sheet of waxed paper, then layer on the other 4 patties. Top with waxed paper and place in the freezer.
Once frozen, transfer the 2 layers of patties, and waxed paper sandwiching them, in a freezer bag. Label with cooking instructions.
Thaw overnight in the refrigerator the night before you want to cook them. At dinnertime, remove them from the bag and paper, place on the broiler pan, and cook as usual.
Notes
Although brown rice works, it holds its texture too well and doesn't meld into the patties. Be sure your rice is cooled, not hot; hot rice softens the fat and makes forming patties difficult. Cold rice clumps together and is harder to mix in.Use soy sauce as substitute for Worcestershire sauce if you run out or need to avoid fish products. Check ingredient labels on soy or Worcestershire sauce if you need a gluten-free option, as not all brands are gluten free. I always bake this on a broiler pan with vegetables underneath; they will be seasoned with the drippings. Fresh vegetables work better than frozen since frozen will let off steam. Give the pan a spray with cooking spray if using fresh vegetables, or they may stick.If you don't have a broiler pan or wire rack, you can bake the fake steak in a baking pan with 2 inch sides.
