These delicious, no-bake treats are easy to make. You can substitute rum for the bourbon if desired. They can also be made kid-friendly by using apple cider instead of alcohol.
2 ½cupschocolate animal cracker crumbs (or chocolate graham cracker crumbs)(260 grams; 4 cups if using whole animal crackers)
1 ½cupspecans( ~175 grams), toasted and cooled
½cupbourbon(4 ounces) (I use a smooth one, like Four Roses)
1cuppowdered sugar
3tablespoonscocoa powder
1 ½tablespoonshoney or molasses(32 grams)

Instructions
Combine chocolate animal crackers and pecans in a large food processor. Process until pecans are finely ground.
Add bourbon, powdered sugar, cocoa powder, and honey to the food processor and process until everything is well combined and smooth.
If desired (or if the dough seems loose and wet), let rest at room temperature, covered, for at least 30 minutes, and up to 4 hours, to let the mixture absorb the liquid completely.
Scoop dough into 1-inch or 2-teaspoon balls - but really, whatever size you would like. Roll them in granulated sugar or other toppings. Store in an airtight container, at room temperature. (Or you can store them uncovered for a little while if you want them to develop a crust.) Bourbon balls keep for at least a month, if you don't eat them all by then.
Notes
This recipe makes enough bourbon balls to fill three 1 ¾ cup containers.You can substitute rum in this recipe. Molasses really melds well with the rum.
