308: Caramel Crispy Chex Mix

I wasn’t particularly in the mood to do anything too involved in the kitchen, but I still wanted to make something. Alex suggested no-bake cookies, but I had just taken a look at my blog post for the Hot and Spicy Chex Mix I made, I decided to look at sweet Chex mixes. I had just gone through my pantry and realized I had some M&Ms, so I decided to make Caramel Crispy Chex Mix.

This was very easy since all cooking is done in the microwave. You put corn syrup, brown sugar, and margarine together in a 2-cup measuring cup, microwave for a minute, stir, and microwave for another minute. Mix again, add baking soda, and mix well. Pour over 9 cups total of rice and corn Chex and mix well. Microwave for 5 (to 6) minutes, stirring each minute. Add M&Ms and spread onto wax paper to cool.

This was pretty tasty. I used dark chocolate M&Ms that were in my pantry, and they broke open and melted a little when I mixed them into the hot cereal. (It’s possible that they had been crushed in the pantry before I added them.) I think I would have liked the addition of a tiny bit of vanilla to the caramel, but the flavor was good without it too. I wish that I had microwaved the mixture for 6 minutes, because some of the cereal was a little chewy rather than crisp. Maybe the mixture soaked into it too much before I got it well mixed, so it didn’t get a chance to be crispy. In any case, I thought this was pretty tasty, and I’d make it again.
