356: Chocolate-Peanut Cookies

While I was trying to figure out what to include in my gift baskets, I came across the recipe for Chocolate-Peanut Cookies (link no longer works). They sounded pretty tasty, and used 2 extra egg whites that would give me the 2 egg yolks I needed to make the Chocolate Thumbprints recipe I wanted to make. I went for it.

The dough was pretty easy to make. It took both cocoa powder and melted chocolate. After the dough was ready, I added both peanuts and peanut butter chips. The recipe said to use a scant quarter cup of dough per cookie, so I used a measuring cup to measure the dough and scoop it onto the baking sheet. 2 inches space wasn’t really enough room for these cookies; some of them ran together. I can’t remember how long I baked these for, unfortunately – I think I may have needed to bake them for the longer time to get them to set.

Chocolate-Peanut Cookies

They were really good. I took them for a potluck at work and everyone said they were really good. They were moist, with a good, rich chocolate-peanut flavor. They were good (albeit large) cookies, and I would make them again.
