Easy Bar Cookie Recipes from Scratch

My easy bar cookie recipes are made from scratch - no mixes, just simple techniques that make bar cookies easier than traditional drop cookies. Whether you need a quick weeknight dessert or a decadent layered bar, here are all my tested favorites.

Can't decide where to start? Try my cocoa-based Fudge Brownies for a rich chocolatey treat, or gooey Chocolate Chip Cookie Bars - they're faster and easier than scooping individual dough balls. For something truly indulgent, my Chocolate Chip Cookie Cheesecake Bars combine two from-scratch favorites into one stunning, handheld dessert bar.

  • Two brownies, stacked on top of each other.

  • One cheesecake brownie seen from a side angle, to show distinct layers of cheesecake on top of brownie.
